I am trying to make a home made vodka by fermenting fruits such as apple, pears, so on. During the distillation, if I go over the boiling temp of the Ethanol (78 C) what will happen?

If your temp raises above that of the alcohol you will get some tail in your distillate. This will give a little flavor, but in my experience leads to a bad taste. I’ve made some out of watermelon and it was too sweet to drink. If you want a flavor, it would probably be better to add it after you have carbon filtered the distillate.
